We develop and produce our flavour solutions in our own production facilities in Copenhagen's Nordhavn.

Flavour solution 1: REDUCED Umami Sauce with Mushrooms
Our mushroom umami product is a natural flavouring made from upcycled mushrooms. We use mushrooms that are discarded for various reasons such as incorrect size, damage, or parts that are not usable.
A staggering 8-10% of all cultivated mushrooms are thrown away, resulting in 200 tons of waste per year from just one producer.
At REDUCED, we see side streams as an opportunity for flavor, which led us to develop our mushroom umami product.
Today, by upcycling just one kilogram of discarded mushrooms, we prevent 0.47 kg of CO2 emissions from going to waste.

Our chicken umami product is a natural flavouring made from upcycled egg-laying hens.
Because these hens eventually stop laying eggs and their meat becomes too tough to eat, they are often discarded or used in animal feed.
In Denmark alone, this leads to an annual waste of 8 million kg of organic chickens.
At REDUCED, we see side streams as an opportunity for flavor, which led us to develop our chicken umami product.
Since the production of 1 kg of chicken results in 8 kg of CO2 emissions (CONCITO), upcycling these hens contributes to a better utilization of precious natural resources.
