Tvedemose is a family-owned business rooted in South Zealand, Denmark. Since 1963, the Hansen family has cultivated a legacy of producing high-quality mushrooms while pioneering sustainable and innovative farming methods.

With over three generations of expertise, Tvedemose has grown from producing 30 tons of mushrooms annually to 2,000 tons today, including a wide variety of organic and specialty mushrooms.

Through our partnership, we upcycle mushroom side streams from Tvedemose’s operations, transforming them into premium, sustainable taste solutions for professional kitchens and food manufacturers. Together, we ensure that nothing goes to waste in the pursuit of exceptional flavour and sustainability.

Partnering with REDUCED

Our partnership with Tvedemose highlights the potential of innovative collaborations to create value from food side streams.

By upcycling their mushroom by-products, we transform surplus into versatile taste solutions for professional kitchens and food manufacturers.

Tvedemose’s commitment to transparency, quality, and sustainability perfectly aligns with REDUCED’s mission to reduce food waste and promote responsible food production. Together, we are shaping a more sustainable future for the food industry.

Shaping the future together

Tvedemose blends traditional cultivation with advanced technology to grow premium organic and specialty mushrooms, including enoki, shiitake, portobello, and emperor’s hats. Their commitment to biodiversity, nutrient-rich composting, and sustainable materials like Danish forest sawdust ensures mushrooms of exceptional quality, taste, and texture.

Together, we’re proving how innovation in agriculture can support both environmental health and the future of food.
