REDUCED Mushroom 019 is an organic clean label ingredient made from second-grade button mushrooms, unsuitable for retail.

They are processed alongside rice koji, produced from fragmented rice grains inoculated with Aspergillus oryzae and Aspergillus sojae.

REDUCED Mushroom 019 offers a rich mushroom flavour, balancing umami, sweet, and salty notes, enhanced by koji fermentation. This product is ideal for soups, sauces, and enhancing umami in plant- based foods.

8-10% of all cultivated mushrooms in Denmark are discarded annually—hundreds of tons wasted due to imperfections like broken stems or bruising.

But the flavour remains unchanged.

The REDUCED Approach

We upcycle organic mushrooms from Danish farm Tvedemose by cleaning, mincing, and combining them with rice koji, made from fragmented rice grains inoculated with Aspergillus Sojae.

Through our proprietary fermentation process, we transform these by-products into ingredients with unparalleled depth and complexity, ensuring nothing goes to waste.
