REDUCED Vegetable 021 is an organic, clean label ingredient made from upcycled vegetable and lentil side streams.
These parts are upcycled alongside a fermentation process with rice koji, produced from broken rice inoculated with Aspergillus oryzae and Aspergillus sojae, using our proprietary bioprocessing technology.
REDUCED Vegetable 021 offers a rich vegetable flavour, balancing umami, sweet, and salty notes. Ideal for soups, sauces, and enhancing plant-based dishes.
