Upcycled ingredients

Each year, 8–10% of mushrooms cultivated in Denmark are discarded for cosmetic reasons like broken stems or bruising — despite being full of flavour.
We work with Tvedemose, a leading Danish organic mushroom farm, to upcycle these second-grade mushrooms. After cleaning and mincing, we ferment them with koji from fragmented rice grains to create a flavour concentrate with real depth and zero waste.
