Ingredients
REDUCED Chicken 020 is an organic, clean-label ingredient made by upcycling chicken back carcass and wings, combined with fermented rice koji.
Using a proprietary bioprocess involving roasting, steaming, and fermentation, it delivers a rich chicken flavour with balanced umami, sweet, and salty notes, making it ideal for soups, sauces, and enhancing chicken dishes.
REDUCED Chicken 020 contains no additives and gluten.

Applications
Upcycled ingredients
2,3 million organic chickens were slaughtered in Denmark in 2022. Inedible carcass parts amount to around 23.5% of their mass.
What if we reintroduced them back into our food system?
We work together with the Danish family-owned organic chicken raisers Rokkedahl to upcycle their leftover wing tips and carcasses from their meat processing plant to create more flavours to share.
