REDUCED Shore Crab 024 is a clean-label food ingredient made from invasive Danish shore crabs that cannot be released back to the sea. These crabs are upcycled, processed and then combined with our fermented rice koji, produced from broken rice inoculated with a mix of Aspergillus oryzae and Aspergillus sojae.
REDUCED Shore Crab 024 offers a robust, umami-rich flavour that embodies the essence of the ocean. The product is deeply aromatic with a perfect balance of sweet, briny notes, and layers of roasted crab shell, elevated by the complexity of koji fermentation.
The product contains no additives and no gluten.

As an invasive species, shore crabs disrupt ecosystems, damage fishing nets, and outcompete native species. Thousands of tons are caught annually as by-catch, only to be discarded as waste due to their low meat content and lack of market demand—until now.
