Upcycled Ingredients
Between 8-10% of all cultivated mushrooms go unused, amounting to several hundred tons annually in Denmark alone. This waste is often due to stems breaking, bruising, or not meeting the size and color requirements set by the retail sector. We collaborate with Danish organic mushroom growers Tvedemose to mitigate this impact. The upcycled mushrooms are cleaned, minced, and processed with our sweet and umami rice koji, produced from fragmented rice grains inoculated with Aspergillus Sojae. Our upcycled vegetables complete the final blend, adding vegetal undertones and pleasant freshness.
