Award-winning, organic chicken stock made from laying hens for use in the professional kitchen. The chicken stock has a pure chicken flavor, slight sweetness from the vegetables, and deep umami nuances.

Our chicken stock is made from retired organic laying hens, "imperfect" organic vegetables, organic second-grade mushrooms, and water. The stock is prepared in the traditional manner, where the liquid simmers and reduces for +16 hours, being continuously skimmed. The end result is a pure chicken flavor.

For every liter of chicken stock we produce, we save more than 800 grams of chickens and vegetables from going to waste.

 

The taste lies in the process

Before we prepare the stock, the chickens are roasted in the oven. This process creates a deeper and more intense flavor. They are then simmered and reduced along with "imperfect" organic vegetables, organic second-grade mushrooms, and water for +16 hours. The end result is a chicken stock with a pure chicken flavor, a slight sweetness from the vegetables, and a rich umami taste.

In 2021, our chicken stock was awarded the title of "Best Chicken Stock" in the category by the Danish Consumer Council "Forbrugerrådet Tænk."

 

How to use our chicken stock:

REDUCED Organic Chicken Stock can be used as a base in soups, sauces, simmered dishes, and risottos. The stock is lightly salted, allowing you to add salt and seasonings according to your taste.

Our chicken stock is based on upcycled produce.

In the past, it was a common practice. When a hen in the chicken coop became less productive in egg-laying, it would be slaughtered, and soup would be made from it. While it is possible to eat the meat from a soup hen, it tends to be tough and lean, with a more pronounced and intense poultry flavor than what we are accustomed to from the type of chicken found in supermarket meat sections. As a result, it's challenging for egg producers to market it to retail, and it often ends up being used for biogas.

However, the intense flavor of a "retired" hen from egg production is indeed perfect when making soups and stock. REDUCED Organic Chicken Stock is made from organic hens from Danish egg production. This not only allows for creating a stock with depth and flavor, but it also means that the hens can contribute to food production and reduce waste from the industry.

The "imperfect" and sorted out vegetables come from Danish organic producers through Gasa Nord Grønt, along with the delicious second-grade mushrooms from Tvedemose.
